Sardine Sandwiches with Fresh Basil and Tomatoes

Last week, I promised to share a scrumptious recipe with you to add to your entertaining foods.  Before I do that, I would like to quickly explain how I intend to share recipes on this site. Without further ado, let’s dive into the Recipe.  I had a long debate about which one to share with you first and came up with this one - Sardine Sandwiches with Fresh Basil and Tomatoes.  The reasons are as follows:-

  • They are easy to make;
  • They are versatile and inexpensive so students and families, including children, can make lots for snacks and entertaining;
  • Most importantly, they are unexpectedly delicious.  Try it and enjoy!


Sardine Sandwiches with Fresh Basil & Tomatoes

This is an unexpectedly delicious sandwich idea for lunch boxes, picnics or as an accompaniment to barbecues.   Also a quick snack to make for the whole family when hungry and pressed for time and a busy person’s go - to snack for entertaining! Enjoy!


Difficulty and Servings

Easy, serves 4

Preparation and Cooking times

    Preparation time: 15 minutes: No  cooking  involved

You will need

1 canned sardines in oil, mashed

1 medium onion, chopped (optional)

1 clove of garlic, chopped (optional)

1 large tomato, chopped

8 tsp margarine/butter at room temperature

5ml light soya sauce

1 hard-boiled egg, chopped (optional)

3 sprigs of fresh basil, chopped

2 tbs salad cream

A pinch of vegetable stock cube, crumbled, to taste

12 sandwich bread slices

For the filling:

  1. Pour sardines in oil out of can onto a shallow bowl and discard bones.  Mash with a fork.
  2. Add the chopped ingredients, soya sauce, 2 tsps of the margarine/butter, salad cream and stock cube and gently mix it all together well.

For the Bread:

  1. Spread a tsp each of remaining margarine/butter on six of the slices of bread.  Then Divide the sandwich filling into six equal portions and spread on the 6 remaining plain bread slices.
  2. Sandwich the slices together and cut each sandwich into two diagonal pieces. Serve with slices of tomatoes and thinly sliced cucumbers, with a tall glass of chilled cordial in summer or a hot cup of spiced tea or Earl Grey tea in winter.

Monica’s Tip:

Leave the sardine oil in the sandwiches for a moist and scrumptious sandwich.  Omit the garlic if you are not a fan, but it really combines well with the onions, tomatoes and basil to bring the sandwiches alive!
